Quick history lesson: Did you know that cheesecakes were once a savory treat? Closer to a bread than a cake, until the 1800s, yeast was used instead of eggs to give cheesecakes their shape and form. The invention of cream cheese in New York in the late 1800s created a dessert craze that eventually (and thankfully!) spread across the nation. Several classics emerged along with a huge variety of cheesecakes that either incorporated chocolates, caramels, fruit, and nuts into the cake or crust, or used them as toppings.
